So, when will Pixel Sweatshop start to build on it?  

Drupal 7 is awesome. We are looking forward to building every site on it. However, there are a number of contributed modules that we would like to use for it, that are not ready for primetime yet. There close, but just not yet ready. We especially have our eye on Drupal Commerce. It has been built from the ground up to be the premier commerce solution for Drupal 7. Ubercart has served us well for many years and will continue to do so for many more. That being said, Drupal 6 is solid and will continue to have a life for several more years alongside Drupal 7. We will also be looking at an upgrade path for our clients that wish to move to Drupal 7. Keep an eye on the blogs for when more info is released.
